- What is Sujihiki? -
Sujihiki (slicer/carving knife) is ideal to thinly slice cooked or raw meat and poultry. It is also one that's used to cut large hunks of meat into section's. It is double edged knife and the shape of blade is thinner and longer than Gyuto (Chef’s), which enables to carve smoother, more precise slices. It is also good to thinly slice raw fish that substitutes sashimi knives.
