Kiritsuke or K-tip means that the shape of a knife. It is a type of knife that has been commonly used in the Kanto region of Japan and has recently gained popularity all over the world as well. Its distinctive feature is that it has a straight, diagonal edge from the spine to the tip when viewed from above. 

 

 

- The character of Kiritsuke -

The appeal of the Kiritsuke knife lies in its versatility and practically among traditional Japanese knives. It is beloved as a multi-purpose tool capable of handling a wide range of ingredients. 

By cutting the tip at an angle, the knife becomes sharper compared to a regular knife, making suitable for fine work, detailed tasks and scooping out.
