Nigara Hamono

Nigara Hamono - SPG Strix Damascus Gyuto (Chef's Knife) with Bubinga Double Marble Buffalo Horn Handle 21cm

$725.00 $797.50
Tax included

This knife comes with a free sharpening ticket (valid for one year, one time only)

This knife is made of one of the highest quality steel. While we can assure you enjoy the excellent sharpness and edge retention, some users may experience chipping on the blade. In many cases it is caused by rough use of honing rods, which we do not recommend for this type of hard and razor-sharp thin blade.

Most of the chipping can be restored by whetstone sharpening, but this can be a little arduous. This sharpening ticket will save you from such an unfortunate case. Our professional sharpeners are here to take care of your first sharpening and maximise the performance and longevity of your knife.

About Nigara-Hamono (Aomori)

The history of Nigara(二唐) Forging dates back to the Edo period (1603 - 1868). Located in Aomori Prefecture in the northern part of Japan, the Tsugaru region is famous for its knife-making, with over 100 blacksmiths recorded in the early Edo period. Among the many blacksmiths, the Nigara family was commissioned by the Tsugaru domain to produce swords, and they have continued this tradition for 350 years. Their craftsmanship has been utilised for military swords and knives, especially kitchen knives, after the war.

In addition to excellent sharpness, their products excel in durability and maintenance, achieving strengths like “not breaking, not bending, and cutting well.” Combining meticulous craftsmanship rooted in history and tradition with innovative designs recognised internationally, Nigara knives offer a unique worldview that is distinctly their own.

SPG Strix: Next-Generation Powdered High-Speed Steel (HSS)

Introducing SPG Strix, an advanced powdered high-speed steel that sets a new standard in cutting performance. Compared to traditional HSS such as SG2, SPG Strix features even finer particle refinement and miniaturized carbides, delivering cutting capabilities comparable to high carbon steels like Blue and White steel. However, unlike these carbon steels, SPG Strix boasts exceptional corrosion resistance, minimizing concerns about blade rust.

Unmatched Sharpness and Effortless Sharpening

While conventional HSS often improves sharpness and edge retention by enhancing carbide hardness—making sharpening more challenging—SPG Strix takes a different approach. By focusing on a hardened base material and a more uniformly textured carbide, SPG Strix enhances both grindability and toughness. This results in knives that are not only easy to sharpen but also possess stronger edges that resist wear and chipping.

Experience the superior performance of SPG Strix and elevate your cutting experience.

Three merits to have good, quality kitchen knives

1. Better sharpness

Improving the cut quality of the kitchen knife, we can promise that "your cooking will be more delicious", "your cooking time will be reduced", and "cooking will be more fun".

2. It is easy to re-sharpen

Since quality kitchen knives do not have distortion, sharpening will become easier. Just as important as the cut quality of a kitchen knife is that it is easy to sharpen.

3. It retains its sharpness for longer

If you use quality kitchen knives, you can extend the intervals between when you need to re-sharpen.
