Whetstone knife sharpening services

We will get your knives professionally sharpened with several different grit whetstones. It does not only regain the original sharpness but maximise the sharpness and edge retention to optimum results.

Please bring your knives to one of the following outlets:

Zan Shin Japanese Knife - 181 Little Collins Street, Melbourne, 3000 (open 10am-6pm Monday to Saturday, 11am-4pm Sunday)

Kaz's Knife and Kitchenware - 33 Grattan Street, Prahran, 3181 (open 10am - 4pm, Monday to Friday)

Sharpening Price 

Double edged Knives, such as gyuto, santoku, petty knives
$1.5 per cm (Ex: $30 for a 20cm Chef's knife)

Single edged Knives, such as sashimi, deba knives
$2.0 per cm (Ex: $40 for a 20cm Sashimi knife)


Restoring Knives Price (including thinning, fixing chip)

$0.5 per cm (on top of sharpening price above)

The term "Honbazuke" denotes the meticulous craftsmanship involved in manually refining a knife's edge to achieve optimal thickness, sharpness, and aesthetic presentation. Kaz is committed to exerting maximum dedication to enhance the performance of your cherished Japanese knife, ensuring you can fully appreciate its capabilities. Employing professional whetstones of up to #10000 grit including natural whetstones for polishing, he tailors the outcome to your preferences for the desired finish.

Why new knives are not always very sharp

Even newly acquired Japanese knives may not consistently exhibit a pristine edge. This intentional choice is made by manufacturers, who often opt for a less acute blade angle to mitigate potential damage during transit and prioritise the knife's overall durability over immediate sharpness. Additionally, they acknowledge the diverse preferences among users regarding the level of sharpness desired, hence leaving room for customization.
