Founded in 1928, Sugimoto Hamono has developed its craftsmanship by listening to professional chefs working in the front line of Japanese cuisines.

Lately, their creation has been expanded towards Western and Chinese knives with the tradition of Japanese bladesmith technique, that are now Sugimoto’s key products in the overseas market.

While there are numbers of commercialised knife brands in Japan, Sugimoto is endeavouring to re-establish the true value of “Made in Japan” knives.

About Sugimoto Chinese Cleaver (No1,2,3,6,7,11,22)

Sugimoto’s Chinese cleavers have particular numbers on each product to indicate the size and thickness of blades. While all of them are in the same design, each cleaver is for different usage depending on what ingredients you are cutting.

The blade of this Sugimoto No 1 cleaver is thin type and good for preparing ingredients for entree dishes, such as chopping meat, fish, and vegetables.

(*)Do not use this knife for chopping bones and crashing garlic with the side blade. The blade will significantly be damaged and unrepairable in some cases.

3 Simple Steps to keep your carbon steel knives away from rust and in a good condition.

  1. Always wash the knife after use. Use cleanser if you have one.

  2. Pour boiling water onto the knife, then dry with wiping cloth.

  3. Rub with vegetable oil and wipe it with tissue paper, this is to prevent the knife having direct contact to the air. 

For everyday use you can apply step 1 and 2 only. However if you store the knife for a long period including step 3 is recommended.

Having been used for a while, even good knives can get chipped and rusty as seen on the above video, but don't worry! 

Most of minor issues can be fixed by sharpening on a #1000 whetstone. We have tutorial videos for you to learn how to use whetstone. However, it might seem a bit hard work to get it done by yourself.

Kaz's knife is offering "Minor-issue warranty" which covers small chips and rust on the knives you purchased from us. You can always contact us when you feel your knife became dull, chipped, rusty, etc. We fix those minor issues and send the sharpened knife back to you, for free of charge! (you only bear the postage for sending us)

(*) Please be advised, we do not warrant major issues caused by misuses of customers such as dropped, cutting bones or frozen food, putting too much force into hard materials, etc.

We ship products from Melbourne with Australia Post. Delivery for stocked items takes 1-4 business days depending on your location. Please allow extra 2-3 business days for an international delivery.

How do I return a product?

Items must be returned within 30 days after receiving your order. Items must be returned in the same condition in which they were received, be unused, including all the original packaging.

Upon items returned and confirmed to be resalable, we will process a refund for the item.

How long will it take to receive my refund?
