Kamo Knives, led by Katsuyasu Kamo—one of Japan’s officially recognized traditional craftsmen—has played a major role in the growth and innovation of Echizen-made knives. Renowned for his skill in forging double-edged knives, Mr. Kamo has particularly advanced the development of vegetable-harvesting knives through close collaboration with local farmers. He also served as the first chairman of the Takefu Knife Village Cooperative Association, dedicating himself to the continued evolution of Echizen's craftsmanship.

The history of Echizen cutlery stretches back to 1337, when a master blacksmith settled in the Fuchu area (modern-day Echizen City) to take advantage of its abundant water sources—ideal for forging swords for samurai and sickles for farmers. By the Edo period (1687–1885), with the support of the Fukui domain lord, Echizen cutlery expanded its reach to overseas markets and earned a reputation for world-class quality. Today, Echizen artisans continue to honor tradition, hand-forging each knife with the same time-honored techniques passed down through generations.
