- Sakai Jikko "Loco" Wa-Santoku Knife VG10 - 

Compared with normal Western knives, this Wa-Gyuto series has much lighter blade. It is suited for those who take on more small sized ingredients rather than chunky food items.

- Usage scenarios and frequency -

Hello. My name is Asayo, working at Kaz's. This time, I would like to share my experience of using Jikko knives.

I am a typical home user that cooking for myself everyday and no experience in professional cooking roles like a Chef or Kitchen hand. Until now, I have been using ordinary knives that I bought since I came to Australia.

Frequently Use ingredients : potatoes, cabbage, zucchini, carrots, broccoli, chicken breast / wings. Also often eat fruits such as apples and Kiwifruits.

 

 

- My experience -

The first thing I noticed that it was very light and easy to grip. The handle is made of Japanese Oak, which makes it significantly lighter compared to mahogany or resin handles.The sharpness is excellent, as anyone who has bought a knife from Kaz's would know. The blade effortlessly cuts through food without extra force. It also cuts through larger sweet potatoes without any issues.

After use, wash it and wipe off the moisture with a cloth to keep it clean. If maintained properly, it will remain in good condition for a long time. In my case, I had it sharpened for the first time after using it for about three months.

A Santoku knife is good enough for multi-purpose for home cooking. However, if you often cut through bone-in meat, hard root vegetables or fillet fish, it would be better to use a knife designed for those purposes.

As mentioned earlier, the Loco handle is pretty light, so for those who prefer a bit more weight, I recommend other series.

In conclusion, I am very satisfied with this knife and will try other knife next time!

  

- Sakai Jikko "Loco Damascus" Wa-Santoku Knife VG10 Mirror-Polished Nickel Damascus  -

The series uses the same steel as the Santoku knife introduced here. If you like Damascus patterns, this one is recommended.
