The Gyuto knife originally came from the West. So it is a Western kitchen knife widely used around the world. An all-rounder, the Gyuto can cut meat, fish (other than bone), and vegetables. Also known as a French knife, Chef's knife, or all-purpose knife, it is used by many people in place of a Santoku knife. The difference from a Santoku knife is that it comes in size increments of 30mm up to a length of about 300mm.
The Petty knife is used for small, delicate work such as peeling vegetables and fruits. It's a small and versatile kitchen knife with a wide variety of applications, such as peeling vegetables and fruits, or decorating fruits for cocktails and cakes.
Sakai Jikko is Kaz's signature knife brand. Established in 1901, Jikko has more than 100 years of technology of Japanese knife making.

The characteristic of "Jikko Damascus Series" is the pattern on the surface of the blade. The 17-layer steel material brings out dense and elegant patterns. Of all the Damascus knives, this one is particularly beautiful.
The Damascus steel material is struck with a handle to give a hammered pattern. Because of the hammered pattern, another feature is that cut ingredients don't easily stick to the blade.

Suited for both right and left handers as the blade is aligned 50:50 (double bevel).
The mahogany handle feels comfortable in the hand, so it doesn't cause fatigue even if held for a long time.
I've been on the lookout for a quality knife for some time and over the years I purchased quite a few - none of them perfect. The Sakai Jikko "Mille-Feuille" Santoku-17 Layer Damascus with Hammered Finish (18cm) is in a different league however. It's very very sharp, it has a lovely weight and feel and it is aesthetically pleasing to the eye. An ideal gift for the enthusiastic home chef.

Even my wife was impressed by how beautiful the 17 layer Damascus blade chefs knife is , from the blade to the handle, a work of art that is more impressive in person than in the photos. Having been used for a while, even good knives can get chipped and rusty as seen on the above video, but don't worry!
Most of minor issues can be fixed by sharpening on a #1000 whetstone. We have tutorial videos for you to learn how to use whetstone. However, it might seem a bit hard work to get it done by yourself.
Kaz's knife is offering "Minor-issue warranty" which covers small chips and rust on the knives you purchased from us. You can always contact us when you feel your knife became dull, chipped, rusty, etc. We fix those minor issues and send the sharpened knife back to you, for free of charge!
